Elderflowers bloom across the UK from around mid-May to mid-June, though timing varies by latitude and altitude — southern England sees flowers earlier, Scotland and upland areas later. Pick flowers on a dry morning before midday when the scent is strongest. Avoid flowers from roadside bushes exposed to heavy traffic. They are used to make cordial, champagne, fritters, and desserts. The same bush produces berries in September.
